Brilliant Celeriac

Brilliant celeriac is easy to grow and harvest, producing big white roots with few external markings and vigorous growth. The flavour is nutty with mild celery and parsley notes.
This versatile root vegetable makes a fantastic puree paired with other roots, or dice it for winter soups and stir-fries. Slice thin for scalloped or gratin dishes, or pickle matchsticks and cubes in vinegar for a crunchy, bright addition to salads and stews.
