Ranging from 1-3” in diameter, this red variety's bulbs have pale, translucent purple flesh and copper-colored, thin, papery skin. Pungent raw onions beautifully complement herbs and bold cheeses. When roasted, firmly-textured, semisweet flesh caramelizes for sublime sweetness.
