All parts of the Allium sativum plant are edible raw or cooked, the leaves, called garlic greens, the flowers or bulbils on the spathe head and the immature flower stalks or scapes of the hardneck garlic varieties. With the exception of the single clove types, garlic bulbs are normally divided into numerous fleshy sections called cloves, which are used for propagation.
Hardneck garlic is generally grown in cooler climates and produces relatively large cloves, whereas softneck garlic is generally grown closer to the equator and produces small, tightly packed cloves.
In colder climates, cloves are best planted about six weeks before the soil freezes with harvest being late spring or early summer. Garlic can be cultivated year round in mild climates.
