Summer white oyster (Pleurotus ostreatus) mushrooms will be there for you in the heat of mid summer when other mushrooms are having a hard time fruiting. White oysters fruit during spells of warm, rainy weather from late spring to late fall. The white mushrooms contrasting with brown wood logs will be a majestic sight.

Oyster mushrooms are among the easiest edible fungi to cultivate, they are aggressive colonizers of multiple substrates.

Grow oyster mushrooms outside using plug spawn and sawdust spawn to inoculate healthy soft hardwood logs such as poplars, soft maples, Sweetgum and box elder, felled while dormant midwinter. Allow ample time for a prolific spawn run and inoculated logs will yield ample harvests of oyster mushroom at low cost for years. Expect several flushes of mushroom clusters throughout the season. 250 plugs will plant five 40'' x 4'' logs.

Grow oyster mushrooms indoors by mixing grain spawn and sawdust spawn with pasteurized straw or sterilized hardwood sawdust packed tightly in sterile containers. Keep moist. Allow 3 weeks for spawn run, substrate will be covered with white mycelium. Make incisions to allow mushrooms to pin. Harvest grown clusters of oyster mushrooms to allow further fruiting.

Grow oyster mushrooms in sterilized grain substrate, using 10 mL of liquid culture for 4 lb. of grain. Use liquid culture within 20 days of receipt.
