Calypso Drying Bean

This unusual bi-coloured Caribbean heirloom delivers a creamy texture when cooked and makes a striking presentation on the plate. The compact plants grow to just 45cm (18") tall, making them perfect for smaller gardens. Calypso beans are straightforward to cultivate and rewarding to harvest. Dry the beans for use in soups and stews throughout winter. As an open-pollinated variety, they're simple to save and replant year after year. Also known as Orca and Yin Yang drying bean.
