Grow true watercress for its distinctive flavor and small, dark-green leaves on crisp stems—an excellent addition to salads and vegetarian dishes. Sow seeds about 5 mm (¼") deep and 1 cm (½") apart, ideally in full sun near clear running water. Thin seedlings to 10 cm (4") apart and keep the soil consistently moist. Watercress prefers soil close to neutral pH; lime can help adjust acidic soil, while finished compost supports vigorous growth. For winter harvests, try growing beneath a cloche row cover, where cool temperatures and lower light can suit the plants.
