Potatoes are underground stem tubers of the plant Solanum tuberosum, a herbaceous perennial in the nightshade family Solanaceae. Native to the Americas, spuds are now consumed as a staple food in many parts of the world. The plant develops tubers to store nutrients, these are not roots but stems that form from thickened rhizomes at the tips of long thin stolons, with small holes that allow breathing, called lenticels. On the surface of the tubers there are "eyes," which act as sinks to protect the vegetative buds from which the stems originate, allowing the propagation of potatoes alongside seeds that are formed through insect pollination when the plant is allowed to flower.
