Liquorice

Glycyrrhiza glabra: the authentic source of liquorice's distinctive flavour. This herbaceous perennial legume produces roots rich in glycyrrhizin, a compound 30 to 50 times sweeter than sugar. The characteristic taste comes from anethole, also found in fennel and anise, though botanically unrelated. Space plants 1m (3') tall at least 60cm (24") apart. Harvest in the second or third year, then reserve and replant roots to sustain your crop.
