Beekeepers use a honeycomb scratcher to cap off a thin layer of beeswax that bees make to seal honey in individual cells. The capping allows honey to ripen and prevents the honey from drying out after ripening. Do not harvest unripened honey as it will be watery and ferment. Shake the frame before extraction, if there is a shower of nectar, the honey is too wet to extract and is not ready for harvest. Uncapping the comb cells expose and release the honey that can then flow out of the honeycomb.
The honeycomb cell cappings are collected, additional honey is allowed to drip out from them and they are cleaned to be a portion of beeswax harvest.
An uncapping roller makes quick work of getting honeycomb frames ready for the honey extractor compared to other methods. Unsealing the beeswax capping with a roller significantly reduces the amount of beeswax removed from the honeycomb so that honey bees can quickly rebuild the comb cells and refill the frames with honey faster. Honey cell uncapping rollers are specially efficient to harvest high quality mono floral honey like the Australian Mānuka honey.
