Tagetes lucida, commonly known as Winter Tarragon or Mexican Tarragon, is a heat-loving herb that brings vibrant flavor and beauty to any garden. This marigold cousin thrives in warm conditions and can survive as a perennial in Zone 8, though it's typically grown as a half-hardy annual in cooler climates. Start seeds indoors and transplant seedlings outdoors in May for best results. The plant produces delicate, toothed strap-like leaves with a pleasant anise scent and petite yellow flowers, both edible and ornamental. In the kitchen, Mexican Tarragon is wonderfully versatile. Add fresh leaves to salads, chop them into tuna or potato salad, or toss with pasta. The subtle anise flavor pairs beautifully with black pepper, lemon, and pear. This enthusiastic grower earned our admiration during field trials and makes an excellent addition to herb gardens and culinary landscapes alike.
